My Background
Baking has been part of my life for a long time.
Years ago, my ex-husband and I ran a small baking business where we made baked goods with no added salt and extremely low sodium ingredients. When COVID made it impossible to safely ship fresh baked goods, I developed a line of shelf-stable dry mixes and baking products instead.
Through that work, I spent years learning the ins and outs of baking for extremely sodium-restricted diets and understanding the needs of the low sodium community.
I also gained a deep understanding of how baking ingredients behave—especially leavening systems like baking powder and baking soda, which play a major role in both texture and sodium content.
Eventually life changed and I started over on my own in a new place. For a time I worked in the kitchen of a special camp for children with life-threatening illnesses, which rekindled my deep desire to help people navigating dietary restrictions.
That experience eventually led me back to the low sodium community.
Discovering the Problem
When we had our low sodium bakery, I made and sold our own sodium-free baking soda substitute.
More recently, while researching alternative leavening options, I discovered something surprising:
People who needed sodium-free baking ingredients now had almost no reliable options.
For years, many people relied on two products:

• Hain Featherweight Baking Powder
Both of those products have now disappeared from the market.
That left many people who depended on them searching for answers.
I kept seeing the same questions:

And the honest answer was:
There simply weren’t any widely available commercial solutions anymore.
The Challenge of Sodium-Free Baking Powder
One of the biggest challenges for people learning low sodium baking is finding a reliable sodium-free baking powder.
Traditional baking powder contains a significant amount of sodium because it typically uses sodium bicarbonate (baking soda) as the active leavening ingredient.
For most recipes, this isn’t a problem.

When the gap in the market became clear, I decided to begin offering it again.
